In The Kitchen: This Aint Your Mama's Mac & Cheese


This is hands down one of my favorite Mac & Cheese recipe's to date. I dated a guy many years ago who always talked about his "mothers mac & cheese", I made this for him one night for dinner..and I never heard another word about his dear old moms dish. My mother and I have been making this recipe for over 10 years and it always gets rave reviews. This dish isn't for the faint of hearts; it is rich, creamy, and extra cheesy [there is a little over a pound of cheese in this recipe]! The addition of the Smoked Gouda & Vermont Cheddar lends a sophisticated kick to an old classic.


You will need:
8oz Vermont Cheddar
8oz Tillamook Extra Sharp Cheddar
2oz Smoked Gouda
1 Can Cream & Mushroom Soup
1Pint Heavy Whipping Cream
4oz Sour Cream
Freshly Ground Black Pepper
Seasoning Salt
1 Small Bag of Large Elbow Macaroni [1lb]

Directions:
Bring a stock pot of salted water to a boil, and add macaroni. Cook until al dente.
Add mushroom soup, whipping cream, sour cream, and 75 % percent of your finely grated gouda, vermont cheddar, and regular cheddar mixture [reserve the rest to sprinkle on top of the dish] to a medium saucepan on low heat. Cook just until all cheese has melted, making sure to stir continuously.
In a medium casserole dish [13x9], add your noodles then pour the sauce over them and mix well.
Add freshly ground black pepper & seasoning salt to taste.
Sprinkle the remainder of your cheese mixture on top of your dish, cover with foil and cook on 350 degrees for 25-35 minutes.
Remove the foil, then place the dish in the broiler for about 2-3 minutes
Let sit for about 10-15 minutes..and serve

    ?: Does small bag of pasta mean 1lb of pasta? Does medium dish mean 13x9x2?

  14. You READ my mine. I was planning on making MAC& Cheese for hubby when he comes home on Wednesday, so I am going to try your recipe. I have no idea where I will find the Gouda around here?? may have to substitute. And will be adding turkey meat to mine. Yummmmmm. Wish me luck...lol Yours looks so mouthwatering.

    For the lactose intolerant, depending on how bad it is you can maybe get away with some lactaid and probiotics.

  17. My men (my 3 sons and my hubby) love Mac n Cheese, this recipe looks really splendid and simple, I may have to give this a try...I usually add the Campbell's Cheddar Cheese Soup to my cheese sauce, but the Gouda cheese will add a great flavor to it. Thanks for the recipe

  32. Being from the South, some things are just staples in Southern families and Mac-n-cheese has always been one of them. I have been on a life long quest to find the perfect recipe that did not include Velveeta cheese and hallelujah, this is it! Made it today with a fried chicken recipe from Paula Deen and sauteed summer veges. Awesome!

  33. I made the mac and cheese and it was good. I wish I knew the correct amount of seasoning salt and black pepper to put in it. Also the Gouda cheese was a bit much, but I still enjoyed it.

  36. A different twist on mac and cheese, for sure. However, not sure I want all of those different variables in my mac and cheese. Being the daughter of a Southerner, we like to actually to *taste* the cheese. So, it's extra sharp cheddar cheese, evaporated milk, butter, flour, lots of black pepper and regular salt.

  37. mmm... mmm... good! last night i tried both the macaroni and the roasted garlic chicken. my best friend's parents are visiting for the month from india, and each day auntie and uncle call me home for lunch. it's been superb. so i wanted to treat them to a real american dinner (not that tex mex and shallow italian they've been getting). so i raced home last night to prepare everything. i brined the chicken for an hour first in salt water, and i acutally chopped the parsely and garlic. i stuffed the inside with the choppings plus the tied rosemary and thyme. i roasted the bird the first 20 minutes at 425 deg, then dropped the heat to 375 for the remaining hour. only substitution i made with the mac and cheese was wisconsin sharp for the vermont. i also made some sweet cornbread to finish off the meal. i knew i had done well when uncle, a very poised and stoic man, bit into each dish, raised his eyebrows at me and did his sideways head nod. he interrogated me the entire night about the preparation. thanks nikole!
